Standalone x86_64 UEFI Demo

This release adds a new standalone x86_64 build in the
vib-os-x86_64/
folder, designed for easy testing on real hardware:

nown Issues
Keyboard input not yet working on x86_64 (interrupt handling needs debugging)

The standalone x86_64 UEFI demo now lives in vib-os-x86_64/ folder
with its own build system. This simplifies CI to ARM64-only builds.
