docs: some housekeeping and updates for project information content

Changes in Project Information

• Removed the Server Hosting section from the Additional Services page, as YourGameHost.com service has shut down.
• Updated the Release Tracker page with the latest information for Minecraft 1.21.8.
• Added/updated the lastUpdated timestamp on relevant pages to help visitors track content freshness.
• Performed minor grammar and wording fixes.
• Updated the MC-SRV-DL-API repository link to point to the new repository.

Other Changes

• Corrected the capitalization of "Github" to "GitHub" across all pages for brand consistency.
