Add account picker to extractor UI

@LukeCroteau can I convince you to add something for this 😁? I copied over your UI code (mostly) and currently it is just hardcoded to select the first account that RTK has in its list.

Not sure how we should handle it for the CLI version-- allow an argument for the account ID, or dump all accounts maybe?
