What changes are proposed in this pull request, and why are they necessary?
This PR adds a README for the coral-spark-catalog module. The module implements a Spark 3.5 CatalogExtension that translates view definitions from any Coral-supported SQL dialect into Spark SQL via the DSv2 View API, but had no documentation describing its purpose, configuration, or usage. The README covers how the catalog works, how to configure it, UDF registration behavior, limitations, dependencies, and test coverage.
