Create documentation on schemas passed to contexture-react

This would be helpful to facilitate a more explicit understanding of contexture-react and to help highlight current structures/mechanisms that we may want to change.

EX: shortLabel is a config prop that isn't very descriptive or clear how it is implemented or why it is needed.

We could potentially use storybook to make this documentation more accessible.
