Maintenance: remove deprecated classes from test coverage in batch

Summary

Some deprecated classes like BatchProcessorSync and partialBatchProcessingSync have been marked as deprecated several months ago, since we will no longer be making changes to them we should now remove their tests and exclude them from coverage.

Why is this needed?

So that we can keep the test suite lean and test what actually matters.
