Hudi Version Upgrade

Hudi version 1.1.0 is released and we should upgrade our dependency in XTable.

The 1.X version of Hudi introduces changes to the metadata layout so it is important that we continue to support the existing table versions while also adding support for the new version.

All hudi PR's to unblock XTable release have been pushed for review. These will be the next steps.

1. Merge hudi PR's by end of this week and ask hudi OSS community for a new patch release.
2. Upgrade hudi version to new patch version 1.1.x and then cut release candidate for XTable next week.
