Please consider to add a tag "latest" in release

While use docker compose to update crproxy release, without tag latest, have to edit the compose file with the latest version tag every time.

This is a small project without enough time to try to do compatibility and regression testing. I cannot guarantee that it will not contain deprecated and unstable updates.
it is better to specify explicit versions, and the latest may lead to unpredictable behavior.
