Iceberg: bump iceberg-rust, improve benchmark, add catalog tests

• Bump iceberg-rust to 375a44a45bff
• Fix IcebergSink benchmark to measure only throughput, excluding sink/table creation overhead. Uses a fresh source table per run to avoid as_of race conditions.
• Add catalog.td tests for UPDATE, DELETE, and mixed operations
