In restaurants, speed matters, but not if you're redoing everything. So really, the goal isn't to rush. It's to move with purpose. So how can you move quickly and also efficiently and accurately? Start by knowing your station and section. Do you know where everything is that you may need? What's your sequence? If you don't know it front to back, take time to get confident. The more comfortable you are, the faster you'll be without even thinking about it. You'll get into that flow. No wasted moves. Just moving with efficiency. Moving quickly and with purpose also means using your eyes and ears. Read the tickets. Listen to call outs. Confirm orders as you go. If something feels off, always double check. This ensures that your speed and efficiency are directed at the right things, not just rushing around.
