Chef Sergio’s Beetroot & Elderflower Medley was inspired by a plight we know well in Canada: wildfire.
A base of black sesame purée represents the ashes left behind. Charcoal croutons rise like burnt branches, while roasted Alberta beets bring colour and life back to the plate. A touch of chili crisp oil sparks throughout the dish like glowing embers.
Wildfires are part of nature’s cycle here, but they also remind us how closely human life and nature are connected.

Hosted in the Kiguli Room at the Juniper Hotel, this powerful exhibition honours over 20 years of gatherings led by Indigenous Elders from First Nations and Métis communities across the Rockies. At these gatherings in the shadow of Sacred Buffalo Guardian Mountain, stories are shared, medicines exchanged, and knowledge passed to future generations. Featuring photography by Craig Richards, the exhibition offers an intimate glimpse into these meaningful annual gatherings.
