O Programa de Pós-Graduação em Nutrição da UFSC (PPGN/UFSC) iniciou efetivamente suas atividades em março de 2002, com a entrada da primeira turma. A partir de 2010, a entrada anual foi alterada para o mês de agosto e, em março de 2012, com a ascensão para o conceito 4, o PPGN/UFSC inicia o nono Curso de Doutorado em Nutrição do país e o primeiro da Região Sul. Ressalta-se o amadurecimento do PPGN/UFSC, com aumento da visibilidade e consideração nos cenários nacional e internacional. Destaca-se a participação dos doutorandos em Estágio de Doutorado Sanduíche e dos professores em Pós-doutorado, ambos no exterior. A maior parte dos egressos está atuando como docente do ensino superior ou como pesquisadores, no Brasil e no exterior. O processo seletivo do Mestrado e do Doutorado em Nutrição da UFSC ocorre por edital anual lançado até fevereiro de cada ano, com seleção no primeiro semestre para entrada em agosto.
