As part of a unique partnership with @SantaAnnas, ICA third-year students were tasked with creating original recipes using Santa Anna’s range of authentic Mexican-style products - reimagined through a South African lens. The theme: Mexican Style, South African GEES! This dish, developed, styled and photographed by Culinary Media Communication student Siphesihle Msimango, is a Mexican take on homemade flatbread. It is topped with charred mielies, Santa Anna’s Tomato & Red Pepper Salsa, crushed corn chips, pickled onions and jalapeños.

As part of a unique partnership with @SantaAnnas, ICA third-year students were tasked with creating original recipes using Santa Anna’s range of authentic Mexican-style products - reimagined through a South African lens. The theme: Mexican Style, South African GEES! This dish was developed by Sebastian Johnson, a New Product Development student, and styled and photographed by Culinary Media Communication student Lola Lambrechts. Inspired by the traditional pupusa, these flatbreads are filled with melted cheese and layered with a spiced sweet potato and carrot chilli, rooibos-pickled curtido and a homemade salsa macha.

This mocktail was developed by Professional Wine Studies & Event Coordination student Khanyi Ntshangase, and styled and photographed by Culinary Media Communication student Lola Lambrechts. Hibisco de Manzana is a refreshing blend of a tamarind-hibiscus syrup, coconut water and sparkling water.

It is served in gem lettuce cups with lime mayonnaise and pickled onions.

This drink was developed by Professional Wine Studies & Event Coordination student Matthew Fibiger, and styled and photographed by Culinary Media Communication student Inge Schoeman. Conductors Favorito, or “Driver’s Favourite”, is a non-alcoholic option made with infused prickly pear juice, vanilla and pimento, finished with lime and mineral water.
